After about an hour of hardish riding in deep stuff, my coolant bottle keeps filling up and leaking out of the overflow hose. Why is this happening? My dealer doesn't know why.

Have you overheated recently? Usually head gasket when this happens, or a warped head if it got really hot. The engine combustion leaks past the gasket and pressurizes the coolant system, pushing it out the overflow.

Sounds like a head gasket and possibly warped head. I've done a few of these on the Nytro motor with the same symptoms. If your dealer can't diagnose a bad head gasket you need to find someone new.
